Vineyard Information

The grapes for this wine were sourced from several regions in the premium grape growing region of South Australia. A mixture of both warm and cool climates ensures complexity and range of flavours, but also allows the winemakers to craft a wine that is ready to drink today. The soils over much of South Australia are predominantly red sandy loam over limestone on gently undulating east west ridges.

Winemaking

The grapes for this wine were picked at night to make sure that they were as cool as possible. Crushed in a range of fermenters, each parcel of grapes was fermented in the manner assessed to produce the best result for its inherent characteristics. The red skins were regularly mixed during fermentation to ensure that the colour and structure were extracted. Pressed off skins around one week later, the merlot was then allowed to go through a second malolactic fermentation. The wine was aged and allowed to mature in tank before minimal filtration and bottling.
